Easter is just around the corner! To get into the festive spirit, we’re sharing a sweet treat you can prepare in advance: a fluffy duck egg cake, perfect for delighting both young and old.

  • 4 duck eggs (about 240 g)
  • 240 g of sugar
  • 240 g of self-raising flour
  • 2 tbsp of milk (optional)
  • Jam (optional)

Preparation

  1. Preheat the oven to 180°C. Grease and line two round cake pans.
  2. Weigh the eggs, then weigh the same amount of sugar, butter, and flour.
  3. Beat the butter and sugar. Add the eggs one at a time, then the vanilla.
  4. Fold in the flour. Add a little milk if the batter is too thick.
  5. Divide the batter between the pans. Bake for 25-30 minutes.
  6. Let it cool, fill with jam, and assemble.
