Coat chicken thighs or breasts with a delightful mix of Ilanga Nature's pineapple jam, Dijon mustard, apple cider vinegar, garlic, and soy sauce. Bake at 200°C for golden, flavorful results. Finish with a drizzle of olive oil and a sprinkle of fresh coriander for a burst of freshness. A simple yet irresistible recipe perfect for any occasion!

Ingredients:

  • 4 chicken thighs (or 4 chicken breasts)
  • 1/2 cup pineapple jam (Ilanga Nature)
  • 2 tsp Dijon mustard
  • 2 tbsp apple cider vinegar
  • 2 garlic cloves, finely chopped
  • 1 tbsp soy sauce
  • Salt and pepper
  • 1 tbsp olive oil
  • Fresh coriander for garnish (optional)

Instructions:

Preheat the oven to 200°C (400°F).

In a bowl, mix Ilanga Nature’s pineapple jam, Dijon mustard, apple cider vinegar, minced garlic, and soy sauce.

Season the chicken thighs with salt and pepper, then place them in a baking dish.

Pour the pineapple jam mixture over the chicken thighs, making sure they are well coated.

Drizzle with olive oil (also available on our site).

Bake in the oven for 35-40 minutes, or until the chicken is fully cooked and golden brown.

Garnish with fresh coriander, if desired.
